Easy Chicken Sausage & Spinach Gnocchi Dinner

  • One 12-ounce package of fully cooked Italian chicken sausage links (separated and sliced)

  • 2 shallots (finely chopped)
  • 1/2 cup reduced-sodium chicken broth
  • 1/4 cup parmesan cheese (shredded)

  • 1/2 cup heavy whipping cream
  • 3 cups fresh baby spinach (cut into bite-sized pieces)

Putting Everything Together

Now, you’ll do the fun part of putting all of the ingredients together. When done, you and your family will enjoy an incredible meal.

Step One

First, cook the gnocchi according to the directions on the package. While that’s cooking, you’ll move on to step two.

Step Two

In a large skillet, heat the olive oil over medium-high heat. Then, add the chicken sausage along with the shallots. The goal is to cook the ingredients until the sausage becomes golden brown and the shallots tender. Next, add the garlic. Cook the mixture for one minute.

Step Three

Now, you’ll need a medium-sized saucepan. To that, add one cup of chicken broth. Bring it to a boil until it reduces by about 50%. Usually, that takes between three and four minutes.

Step Four

For this step, put the cornstarch in a small bowl. Add the reduced chicken broth and whisk the two ingredients until they’re smooth. Then, add the sausage mixture and return the ingredients to a boil. For this, you’ll need to stir continuously until everything thickens. Typically, this takes just one to two minutes. Remember, if the consistency’s too thick, you can add additional chicken broth a little at a time.

Step Five

Now, add the spinach and heavy whipping cream to the saucepan. Again, stir the ingredients while cooking. Once the spinach becomes wilted, quickly drain the gnocchi and add it to the pan. Then, heat everything through.
